Sweet Potato Stew

I think this may be the simplest whole foods recipe I make. It is so good on a cold winter day. I reduced the cayenne pepper for this post. The original recipe I made up had 1 tea of cayenne. You may try this... but unless your kids are super human, the heat may be a bit much for them. It is one of those things that you want to try with a group of adults. Of course, all of these recipes you can easily adjust and make them perfect for your family.

Sweet Potato Stew

4 large sweet potatoes
Water to cover
2 Tbs sliced (or 1 Tbs grated) fresh ginger
1/4 tea cayenne pepper
1/2 tea cinnamon
1/2 c peanut butter (crunchy or creamy, really doesn't matter... just don't get the kind with added sugar)

Peel and slice sweet potatoes into small chunks. Put in a large pan and cover with water. Boil (with lid on so it doesn't reduce much) until potato pieces are falling apart into tiny chunks. Mash the sweet potatoes (without draining the water, leave the water in the pot) until you have a thick sauce like consistency. Add in all other ingredients, and salt to taste.

Serve topped with sour cream or whole milk yogurt (not flavored), with salted peanut pieces and chopped cilantro.

I hope Logan feels better. Don't feel guilty about letting him play. He wanted to play told you he was ok. I think he will heal just fine. What a tough little guy!

I think I'm going to get a helmet for my little man. I do believe almost daily he's hitting his head on one thing or another. He reminds me of Steve Martin's littlest boy in Parenthood.

Nessa: That is what I thought about Cyan! She seriously put her teeth through her lip about 12 times before she was 4. She has broken 5 teeth (one was the baby and then the permanent before it was even out!) She has gotten much better now, but is still very accident prone. She has been quoted to say "Why is it always ME!?!"

Logan isn't like this. I don't think he even has had a diaper rash before this... oh wait. He did fall down some stairs and mar his upper lip pretty bad, but that was over a year ago. He isn't accident prone and sometimes he is so tough he will not notice bruises and I will see him all banged up in the bathtub later and wonder where the heck I was and why I didn't notice he was hurt.

Guilt. It is a thing. Ugh.
