I made PIE!

I know it seems silly to be so excited. But I have baked every other day for a week and two days now, and nothing has been awful... nothing has been perfect either, but I was going for eat-able... and I got it.

This pie was made completely from scratch with lemons my mom brought with her from CA and eggs from my chickens. I made a whole wheat pastry crust, and I wish I hadn't. Lemon Maringue is one of those pies that needs to be super sticky sweet and light. But aside from that, this is really good pie. :)

I can bake.

I am happy.

That looks delicous. I haven't had a lemon meringue pie for a long time, what recipe did you use? Your meringue looks perfect, I hope you get to enjoy it again.

I think it was less the recipe and more the eggwhites. Egg whites from healthy happy chickens are seriously like they are from another creature. My bitties get to be outside most of the day... they get to roam and dig and be chickens. I have never had food turn out (egg food I mean) anything like as light and wonderful as with my chickens. And it is winter! They are not laying the best eggs they can yet...

Oh! My daughter made a pie yesterday and it is almost identical to that, right down to the fresh chicken eggs!
