Avocado Salad Lettuce Wraps

My friend Darren always put avocados in his egg salad when he was running short of eggs. My kids and I LOVE avocados and so I decided that from then on, I would start doing that when ever I had them. It has turned into a tradition, and in this particular recipe, I wrap it in lettuce fresh from the Farmers Market, making it even more magical!

Avocado Salad Lettuce Wraps

You need:
3 hard boiled eggs
3 Tbs mayonnaise
1 tea hot curry powder
1 ripe avocado, diced (slightly firm is better than slightly overripe)
8 pieces of lettuce, washed and dried
salt and pepper to taste

Mash up the eggs in a bowl with the mayo. Add in diced avocado and spices and mix thoroughly, but try not to mash the avo. You want those pieces to stay firm a little bit. Place two lettuce leaves down on top of one another and scoop the salad into the center. Repeat until all the salad is gone.

You don't need bread for this, but I added in some of my freshly baked WW Artisan bread anyhow... just because it was there. :)

Have been sick all week and my mom showed up today with homemade (from scratch not a box) chocolate spice cake and a warm loaf of dad's bread!! yum. ate both with CSA salad for lunch today...mmmm.

I make a ton of egg salad because we have chickens and two young boys ;)

I read this while I had eggs on the stove this morning and this sounded so good I tried it and YUM is right! LOVED IT! (and so did the kids!)
